native food for your menus

Since popping up on the menu at Noma Sydney earlier this year, the trend towards native food has taken flight. But in contrast to the Noma style of cooking, these exciting ingredients can be utilised easily and successfully on menus in the simplest of ways.

 

Chef Jock Zonfrillo of Adelaide’s Restaurant Orana has been using native Australian produce with great success for years (check out the Orana dinner menu here). Now with greater access to these more difficult-to-source ingredients, you can lend a little native Australia to your menus as well.
